How long does sorrel take to mature?
You don't need to wait for the plant to mature. Just pick the young leaves off the plant as you need them after about a month.
How do you protect sorrel from winter frosts?
Sorrel is usually okay in winter weather, unless you live in the far north. You can try covering it with garden fabric, mulching the base of the plant to keep the roots warmer, or building a cold frame.
Can I use soil designed for cacti and succulents to re-pot a bromeliad?
Usually. But some bromeliads don't like soil at all and prefer moss or bark. Use whatever your plant originally came in.
